Daidala Ciders dreams up creative, locally-sourced, small-batch hard cider. Our mission is to serve up finely-crafted ciders using unexpected and eclectic flavor combinations for your drinking pleasure. As a nomadic cidery, we use space from other facilities to produce our cider.

The word daidala (pronounced die-dah-lah) is derived from Daedalus, an inventor and craftsman of Greek mythology. Although he was a mortal, the Gods were in awe of his creations—so much so that the ancient Greek referred to finely crafted objects as daidala.

Our Ciders

We take our ciders seriously and craft recipes that allow each element of the flavor profile to shine. Sour, hoppy, barrel-aged, fruity—we are passionate about the diversity of shapes that craft cider can take, and we strive to be creative above all else. The American cider scene offers abundant choices, and Daidala Ciders wants to offer you a different drinking experience.

Always on the move, creating and developing new ciders, our available selection varies often. Here are some examples of what you may find on your cider journey:

Watermelon Rosé

As the its name suggests, this cider is blended with a generous dose of fresh-pressed watermelon juice and has a dark pink hue. Additions of hibiscus, pomegranate, and lime make it a perfectly refreshing beverage.
Vermillion Sour

A sour cherry cider aged on French oak. Its tart quality sits somewhere between a dry rosé and a sour beer, and the oak lends a creamy, vanilla texture. Bottle conditioned and very dry, this cider is delicate without sacrificing flavor
Blood Orange Sunset

Citrusy and tropical, this hazy cider is dominated by blood orange and guava. A hint of spice is added to bring it a little structure, but there is no escaping the juicy nature of this cider.
Kiwi Gose Cider

This gose-style cider is made with kiwifruit which lends to a soft, melon character. It is earthy, tart, and dry with a pleasant touch of saltiness. Incredibly refreshing and complex.
Modern Twist

A bourbon barrel-aged cider modeled after the iconic Old-Fashioned cocktail. Orange peel and some spices are added to emulate cocktail bitters, then finished with a touch of simple syrup to round it out. A boozy, oakey nose with a hint of orange, and a smooth finish. Aged a minimum of one year in bourbon barrels.
Green Glory

After spending so much time in a city known for its craft beer, I was inspired to create a hard cider that would feel at home in Portland. Green Glory is an aggressively-hopped cider made for IPA-lovers. Brewed like an IPA with several hop additions during the boil as well as dry-hopping, it’s the most full bodied cider with hop forwardness from front to finish. An ideal fusion of cider and brewing culture!
